Nut flavour FAQs
Which nut flavours does Uren stock as standard?
We supply over 15,000 natural flavourings and extracts, from almond, hazelnut, pistachio and pecan through to praline, gianduja, marzipan, frangipane, nougat and chestnut. We also create bespoke custom flavours for a fully customised option, including roasted profiles matched to your own recipe. Liquid, powder, heat stable and nut free formats are all available across the range. If you can’t see what you’re looking for, just ask and we will put a selection together.
Can I get nut flavours as natural flavourings?
Yes. Under UK and retained EU labelling rules, a flavouring can only be declared “natural [name] flavouring” when at least 95 per cent of the flavouring component comes from the named source. We supply to that standard across the nut range, and natural is where most sweet and bakery development now sits. Tell us the declaration you want on pack and we will build to it.
What is the difference between a nut flavouring, a nut paste and real nuts?
A flavouring carries the taste and aroma at fractions of a per cent, with no impact on texture or colour. A paste is ground nut, so it brings real nut solids, oil and colour, and contributes to a nut content claim. Whole and chopped nuts add bite and visual appeal. Flavourings are concentrated, so a little goes a long way, and they are stored cool and dry rather than frozen. Plenty of products use a flavouring alongside the real thing to lift the roasted character lost during baking. Tell us which parts you need and we will look at the build with you.
Can I get nut free nut flavours?
Yes. Nut free formulations deliver roasted, buttery and praline character without tree nut or peanut allergens, which is why so many brands choose them for products made on shared lines or sold into allergen aware categories. Every factory and every specification is different, so talk to us about your own allergen requirements and we will confirm the status of each flavouring with the flavour house before you sample.
Are nut flavours stable through heat processing?
Many are, and roasted nut profiles hold up better than delicate fruit. The compounds behind toasted character are relatively robust, though the finer top notes can fade in a hard bake or a long heat step. We build heat stable versions for bakery, coatings and extrusion, and encapsulated powders suitable for dry blends where the flavour has to survive into the finished product. Do you supply organic nut flavours?
Yes. Uren is Soil Association Approved and supplies organic across the range where certified supply exists. Organic nut flavourings are tighter than conventional in both availability and lead time, and organic pistachio and hazelnut in particular move with the harvest. Make sure to get in touch early on in the process and we will check current availability with our partners before you place an order.
Can you match a nut flavour we already use?
Yes, and it is a large part of what we do. Send us the current specification, or a sample of the finished product, and our team will work with the flavour house on a match. Formulation sits with our continental flavour house partners rather than in the UK. Uren are accredited UK agents and brokers, and we manage the brief, the samples and the supply from first sample through to delivered order.
What gives roasted nuts their flavour?
Roasting. Raw nuts are mild and milky, and it is the roast that creates the pyrazines, furans and aldehydes behind that warm, toasted aroma, while the natural oils carry richness across the palate. Sweetness, a little bitterness and a buttery mouthfeel complete the picture, and toasting intensifies all of it. A good nut flavouring rebuilds every layer, which is why it is made from many components rather than one.
Which nut flavours are the most popular?
Pistachio, hazelnut and almond lead by a distance. Pistachio is roasted and buttery with a slightly floral edge and a colour that makes it instantly recognisable, hazelnut is toasty, sweet and deeply aromatic, and almond is mild and gently sweet, so it carries other flavours well. Pecan is rich, buttery and naturally sweet, and walnut, macadamia, cashew and pine nut are all gaining in popularity.
Which flavours pair well with nut flavours?
Chocolate and coffee above all. Hazelnut with chocolate is the pairing that built gianduja and praline, and hazelnut with coffee sits behind a whole category of hot drinks. Almond works beautifully with citrus, cherry and dairy, pistachio with rose, cardamom and raspberry, and pecan with salted caramel, maple and brown butter. What can nut flavours be used in?
Almost anything sweet, and a good deal that is not. Bakery, chocolate and confectionery are the biggest categories, followed by ice cream, yoghurt and chilled desserts. Nut flavours are ideal in hot beverages, syrups and nut milk drinks, in protein bars and shakes where they round out the base, and in cereal, granola and snack products. They also work in savoury cooking, in sauces, dressings and seasonings, and in satay style bases where nuts meet warm spices.
